These Pineapple Coconut Popsicles Will Make Your Summer Top Tier

  • Prep Time: 15 minutes
  • Freeze Time: 4 to 6 hours (or overnight, we know you’ll forget)

Ingredients

  • 1 can (13.5 oz) full-fat coconut milk
  • 1.5 cups fresh or canned pineapple chunks (drain if canned)
  • 2 tablespoons honey or agave (adjust to taste)
  • 1 tablespoon fresh lime juice
  • Pinch of salt
  • 80mg THC-infused tincture

Instructions

Step 1: Grab your infused tincture

Head to Trees and pick up a THC-infused tincture. These are usually available in measured doses. This makes the math easy so you don’t have to break out a calculator at 11pm. Check with your budtender for current options. We always have you covered.

Step 2: Blend everything together

Add the coconut milk, pineapple chunks, honey, lime juice, and a pinch of salt to a blender. Blend until completely smooth, about 30 to 45 seconds. You want it silky, not chunky. This isn’t a salsa competition.

Step 3: Add the infused tincture

Here’s where it gets interesting. Add the tincture to the blender. Give everything one final 15-second blend to incorporate evenly. This step matters. You want consistent dosing throughout every popsicle, not one rocket ship and seven duds.

Step 4: Pour into molds

Pour the mixture into your popsicle molds. Leave a small gap at the top for expansion. Insert the sticks. Give the molds a gentle tap on the counter to knock out air bubbles.

Step 5: Freeze

Pop them in the freezer for at least 4 to 6 hours. Overnight is ideal. Try not to open the freezer every 20 minutes to check. We know you will. We’re not judging.

Step 6: Unmold and enjoy

Run the outside of the mold under warm water for 10 to 15 seconds to loosen. Gently pull out your creation. Take a moment to admire what you’ve built. Then eat it responsibly.

Dosing Notes (Seriously, Read This Part)

Edibles are not a race. Infused foods metabolize differently than flowers. This means the effects take longer to arrive. They also stick around longer than you might expect. Here’s what you need to know before you eat three of these because “I don’t feel anything yet.”

  • Timing: Expect 45 minutes to 2 hours before you feel the full effect. Be patient.
  • Duration: Effects from edibles typically last 4 to 8 hours. Plan accordingly.
  • Start low: If you’re new to edibles or haven’t tried infused foods before, aim for 5 to 10mg per popsicle. Wait it out before reaching for a second.
  • Do the math first: Divide the total mg of THC in your infused tincture by the number of popsicles you made. That’s your dose per pop. Write it on the bag!
  • Safety first: Keep out of reach of children and pets. These look like regular popsicles. Label them clearly and store them somewhere safe.
