You’ll Look Like a Fancy Chef with Minimal Effort

Summer entertaining season is upon us. You need something that will make your friends think you spent the afternoon over a hot stove. The truth? This appetizer takes about 15 minutes of actual effort. It costs less than a fancy cocktail. It will have people asking for your recipe like you’re some kind of culinary genius.

We’re talking fresh burrata with caramelized onions and summer peaches, finished with a drizzle of THC-infused honey. It’s beautiful. It’s seasonal. It goes stupendously well with whatever playlist you’ve got going on the patio.

What You’re Making

Fresh, creamy burrata on a platter. Slow-caramelized sweet onions piled on top. Juicy caramelized peaches on the side. A generous drizzle of THC-infused honey over the whole situation. Crusty bread or crostini on the side because you’re not a monster.

Ingredients

(Serves 4 to 6 as an appetizer)

  • 2 balls fresh burrata (8 oz total) fresh from the deli, not the sad jarred stuff
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons of butter
  • 1 tablespoon olive oil
  • 2 ripe peaches, pitted and sliced thin
  • 2 to 4 teaspoons THC-infused honey (see dosing section below, read it)
  • Flaky sea salt
  • Fresh cracked black pepper
  • A few fresh basil leaves or fresh thyme sprigs (optional, but it makes the platter look like you tried)
  • Crusty sourdough, a baguette, or crostini for serving

Step-by-Step Instructions

Step 1: Caramelize the onions and peaches

Heat butter and olive oil over medium-low heat in a wide skillet. Add the sliced onions and a pinch of salt. Stir to coat.

Now leave them mostly alone. Stir every 5 to 7 minutes. Adjust the heat if they start to brown too fast. You want them to slowly turn jammy and golden. This takes 30 to 40 minutes. Yes, really. No, you can’t rush it. Put on a podcast. Roll a joint. Have a snack. The onions know when you’re impatient and they will spite you.

When everything is deep golden, sweet-smelling, and reduced to about a quarter of their original volume, you are done. Pull them off the heat and let them cool slightly.

Step 2: Plate it

Tear or gently place the burrata balls onto a large serving platter or wooden board. They’ll want to collapse a little. That’s good. Season with flaky sea salt and fresh cracked black pepper.

Pile the caramelized onions over and around the burrata. Serve the caramelized peaches on the side of the burrata. Tuck in a few basil leaves or thyme if you’re feeling extra.

Step 3: The honey drizzle

Measure your THC-infused honey carefully (more on this below). Drizzle it over the entire platter right before serving. Don’t do this step ahead of time. You want the honey fresh on top, not absorbed. You can also keep the infused honey on the side for self-drizzling and custom dosing.

Dosing Your Honey Drizzle (Read This Part)

Infused honey is delicious. It is a genuinely great way to add cannabis to a dish. It’s also one of the less precise methods. Unlike a gummy where the dose is printed on the package, a honey drizzle is a drizzle. Here’s how to keep it fun and not have your dinner party turn into a floor situation.

  • Know your honey first: THC-infused honey products will list the total mg of THC per container. They usually list the mg per serving or per teaspoon too. Find that number before you cook. A typical teaspoon of infused honey might contain anywhere from 5mg to 20mg of THC depending on the product. That’s a meaningful range.
  • Measure, don’t free-pour: Use measuring spoons. A teaspoon over a whole platter serving 4 to 6 people means each person is getting a fraction of that teaspoon. That is roughly 1 to 2mg each with a 10mg/tsp product. That’s a mild, approachable dose for most people. If your honey is more potent or your group has lower tolerance, go with half a teaspoon. Add more to individual portions if people want it.
  • Go low and slow: This is edible territory. Onset typically takes 45 minutes to 2 hours depending on metabolism, what else you’ve eaten, and individual body chemistry. Remind your guests that they’re eating an infused dish before they dig in. No surprises. Encourage everyone to wait and see how they feel before going back for a fourth crostini.
  • Keep non-infused honey on the table too: Regular honey on the side means guests who don’t want THC can still enjoy the dish. It also ensures you control exactly how much infused honey each serving gets.
